I cannot open Sierra Charts. I only get screens with blank squares where text should be. I did not keep up with the updates but I can not update the software either because I can not run it.

This did this and it did not work. I have a MAC with Parallels. when I unzipped and saved to Sierra File the icons do not appear

Once you have extracted the files you can run Sierra Chart with SierraChart_64.exe.

If you want to create a desktop shortcut use this command:
Global Settings Menu: Create Desktop Shortcut (Global Settings menu)

Sierra loads on my desktop but all the panes are blank. It is like all of the files are not there. I cannot even unistall if I wanted to.

Let us focus on just a particular chart. So is it completely blank?

What is the symbol of the chart? You can see that on the title bar of the chart.

Also follow this procedure:

Follow the instructions here to clear the Message Log:
Message Log: Clearing the Message Log

Fully re-download the data in the chart by going to the chart and selecting "Edit >>Delete All Data and Download".

After about a minute provide a copy of the Message Log following these instructions:

It is hard to explain. I can not get into Sierra at all to do anything. In the Sierra Folder in my C Drive, I cannot click on anything in there as well. I thought it was my Parallels program but everything else loads fine on my Mac except Sierra. I see the login window and chart load up but they are blank (nothing in them) there is no link on them to click. I can see the coloured strip at the top of the chart layout which is red so it is not connected on line. I cannot uninstall it either. I think I will have to uninstall my Parallels and Windows on my MAC and start again.

Regarding our call, follow the instructions here to copy Sierra Chart to a new computer:
Transferring Sierra Chart Settings and Data From Existing Installation to New Installation: Simple Transfer/Copy of Sierra Chart Installation to Another Folder or Computer System

Let us know when that is done so we can help you with starting up Sierra Chart which should go completely fine but we can be available to help with any issues.

For now you can use ESH21-CME and get streaming delayed data.
