From a performance standpoint, when you have a relatively large number of charts opened, is it better to have all the charts in one chartbook or spread across chartbooks or does it make no difference at all?

It does not make a difference in terms of Chartbooks. But what can be helpful is to have multiple sub-instances of Sierra Chart to spread the load. Refer to the following:

It can make a difference with operating system resources. If they are in different Chartbooks and you have set this option, then that reduces resources:
General Settings Window: Destroy Chart Windows when Hidden (Global Settings >> General Settings >> GUI >> Application GUI)
