I noticed when i reload a certain chart I have built, the volume data changes, so I opened a duplicate of the chart to compare volume live and it is different on the original by almost double per bar. Please see the image attached. I have created a complex chartbook so would rather not have to rebuild, what could be the basic reasons for this?

Make sure those charts are not using volume filtering:
Chart Settings: Volume Filter (Chart >> Chart Settings >> Data Limiting >> Volume Filter Settings menu)

Make sure the Session Times are identical for both charts:
Chart Session Times

And are these charts both in the same running instance of Sierra Chart?

Yes I checked volume filtering that's what I first thought, and the session times are the same. The strange thing is that if I duplicate the chart in question, the volume on the new duplicated chart is fine. So I'm going to use the duplicate and will just have to update a few other studies which reference the problem chart, not as big a problem as I first thought

There must be something else going on that we are not aware of because what you are showing really is an impossibility. This just simply does not happen ever.

I couldn't find the exact problem but I had a lot of additional symbol studies on the ES chart (most hidden) of market stats NISS-NYSE, Tick etc. Once they were removed the volume of the main ESU19 chart was fixed, so I have just changed my chartbook around and spit all the market stats onto a separate chart. Probably too many studies on a single chart?
