I only need real-time data for a small handful of symbols at a time, 3-5, but work with a large total number of symbols with historical data, 30-40+.

How can one set/control/change which symbols are set to receive realtime data and which are set to receive delayed data, to remain within the 20 symbol limit and continue working with larger amounts of symbols using historical data?

All symbols would receive real-time data.

Refer to this documentation here:
Chart Data and Chart Data Files: Reducing Number of Symbols Being Tracked by Sierra Chart

Also we expect in about three months to be able to significantly increase the symbol limit for CME real-time data with the Sierra Chart Exchange Data Feed.

If it could be possible to set/manage the symbols receiving RT, it would be useful to lower unnecessary higher fixed monthly costs of the higher symbol limit feed options.

No but this is not going to matter after about 2 to 3 months.

Do you mean that at that time not only will the limit be gone, but the cost will be lower also?

Yes amazing what we are able to do when we become a direct market data vendor and then we hope users can begin to see why it is it is important that we begin to concentrate the bulk of our users onto our upcoming single unified order routing solution so that there is enough money to pay for all of these improvements:
Sierra Chart / Trading Technologies Futures Order Routing Service

This is a gradual process and we are not here to force anything, at least not in the near term. And only until the solution has proven itself.

Sounds good.
As long as we can still execute off Interactive Brokers until there is a feasible replacement for global customers
