To load a specific symbol that is not listed in the "Find Symbol" window, you need to type in that symbol in the "Selected Symbol" field. For instance, to get the data for the 6E M contract from 2021, you would enter the symbol as 6EM21-CME. But, you are using a Continuous Futures Contract, which is why you are able to view the data going back that far without having to load that specific symbol. What you are doing is fine as long as that is what you want to do.
