Using the "Translate Symbols to Current Service" should not have any effect on the actual chart itself and what is displayed and how it is displayed. This is true in general when changing the symbol. What exactly is occurring that you say your charts are different besides the symbol itself? 1. You can just translate one chart, but then you will not be getting data or the ability to show orders on the other charts. Basically the other charts that are not translated are then useless. So you really do need to translate all of them. 2. There is no difference between manually changing the symbol and using the option to "Translate All Symbols to Current Service".
