We just had a quick look at this, it is very clear that the problem is on the Bitstamp side. When our server asks for the list of trades, Bitstamp is not giving us the latest trades at that moment in time. That is where the lag is. Our server makes a request every 5 seconds to their server. The site you have linked to must be using their streaming data feed. We do not have the documentation for that.
