I currently have the historical data feed and have been analyzing the E-mini. I plan on soon upgrading to the real time data feed for this, likely with Interactive Brokers. When I do this, will my chart then be getting the market data from IB, or will it still come from the same source as the Historical Data I have been using? This is important because volume is an important factor in my system and I have heard that IB doesn't provide great volume data.

The historical data will still come from Sierra Chart services if you are using Sierra Chart package 3 or 5. But the real-time data will come from Interactive Brokers. You can always periodically re-download the recent data in the chart to get data from the Sierra Chart Historical Data Service. Ok but I plan on using the automated spreadsheet trading feature, so I'm not sure if periodically re-downloading the recent data will be an option. Will the Bid/ask volume data from IB be much different than the SC historical data? Is one of the other brokers better for this?

If you require reliable data when using Interactive Brokers, then use the Sierra Chart Real-time and Historical Exchange Data Feed: Sierra Chart Exchange Data Feed This data feed is integrated with Interactive Brokers so you can trade with IB and get good quality data.
