If there are non zero values in Chart Stats in SIM mode when I open Sierra at the begining of the day (7 am EST), what is the safest procedure to clear these data?

Have a look at this setting:
Chart Settings: Load Order Fills for Current Day Only (Chart >> Chart Settings >> Trading menu)

You would then want to do a recalculation for all charts but we can see there is no command for that. But we will add one. Currently use this:
Edit Menu: Edit >> Reload All Charts

Generally we recommend not clearing order fills so you have a history of them. However, that is up to you.

Yes that is true.

So instead you would want to use this setting:

Chart Settings: Order Fills Start Date-Time (Chart >> Chart Settings >> Trading menu)
