Hi! I have a 2nd monitor, is it possible to display 2 chartbooks at the same time? 1 on my main monitor and 1 on a 2nd?

The only way to actually have the full chartbook (and hence all of the chart tabs that go with it) on a separate monitor is to use a second instance of Sierra Chart and move that to the second monitor. Refer to the information here:

Otherwise, you can always move individual charts to the other monitor by detaching them from the main window. Refer to the information here:

once I have created the 2nd instance. I can just go to file, new instance to open it every day?

You can automatically open additional instances when you start Sierra Chart. Refer to the following:
General Settings Window: Instances to Run on Startup (Global Settings >> General Settings >> General >> New Instances)
