When I trade via chart and change the quantity of shares, the step is sometimes 1 share and sometimes 100 shares. Where can I set it to 100 shares if I press the +/- buttons.

This is set through Global Settings >> Symbol Settings. Locate the symbol pattern for the Stock symbol you are trading and adjust the Default Order Quantity. That serves as the increment.
