is there a way to select which price to show on the price axis and which prices to build the chart bars with? whether ask price, bid price, ask/bid average, last price? which is the default actually shown if haven't set up anything?

Yes this is fully supported. Refer to: Data Recording Modes The default depends upon the symbol especially if you are using Interactive Brokers.
