How can I operate one dom in live and another dom (on different pair) in demo mode please?

You need to use another instance of Sierra Chart.

The easiest way is with File >> New Instance:

One more Question. How do I actually copy my dom settings over etc? It seems like they have reverted to default?

In newer versions of Sierra Chart these are saved as part of a Chartbook. So you need to copy a Chartbook from one instance to the other.
