Where did you get the information from that says 6pm to 8pm is classed as a SUNDAY trading day and that Monday starts from 8pm on Sunday?
This is how Sierra Chart treats that day when using a start time of 20:00. Trading before 20:00 will be considered Sunday if using a start time of 20:00.


If you do what you are suggesting a trader risks getting the wrong high and low and trading volume etc for Monday as it will exclude the first two hours on Sunday night.
Not if you look at a Historical Daily chart and that is the purpose of them. You can also overlay whatever data you want from that historical daily chart on Intraday charts.
