First, I applaud you for taking the step to Sierra. I was in the same boat a few years back. I thought it would be super challenging but it was way easier than I thought.

I upgraded from 1080P monitors to 4 Dell 27" 4k monitors (3840 X 2160). I was somewhat concerned about what would happen with Sierra on these new monitors. But since everything is so customizable, I wasn't too concerned. I did NOT want to scale Windows. That was a no-go for me. I keep Windows at 100%. I went through the global graphics settings in detail and tweaked everything that pertained to fonts. I can tell you everything is perfect and very dialed-in so everything is very legible, crisp and precise. I have several Numbers Bars charts, Volume Profile charts, Candlestick charts, various time frames and it's all perfect.

If you have 8K monitors then things will be different than my settings but here's how I have things set under the Font menu - assuming you have 4K monitor(s)

I suggest going through the Global Settings >> Font first and seeing what you like. My settings - See image. Change to what you like. Also, the font makes a big difference. Some fonts are better than others.
