What are you stating is not possible. If you actually have two separate chartbooks, then when you change the symbols in one of those chartbooks it can not change the symbols in the other chartbook.

Make sure you have properly created two separate chartbooks. Refer to the following:

And keep in mind that if you have the option for "Window >> Window Always Visible", then those windows will be visible regardless of what chartbook you are viewing. This is another possibility that you are actually viewing the charts from one of the chartbooks that was changed to ES.
