There seems to be only one tool configuration/instance for VP in Sierra and changing the default settings to be a delta profile overwrites the normal VP settings.
Just like with all the drawing tools, there are 24 configurations that can be setup for the Drawn Volume Profile. So you need to setup separate configurations for what you want from each one, and use the appropriate configuration when drawing the profile for what you want of that profile.
