It's really a personal choice as to whether you use the Evening Session separately or not. If there are times when you want to see the Evening Session different from the Regular Trading Hours (such as with the Volume by Price or TPO charts) then you would want to use the Evening Session. Otherwise, what you have set will work. You could also set your Session Times to cover the full 24 hour period (17:00 - 16:59:59) and let the break just naturally occur (you will not see any trades between 17:00-17:59:59).
