It sounds like you should have the "Volume Graph Period Type" set to "From Session Start Time to End", which will then give you the most recent Volume by Price profile when the session time changes. Just keep in mind that if you are using the Evening Session, then that would be the start of that session, so you may need to change your Session Times based on what you are wanting.
