I'd be concerned about future compatibility Apple, Crossover, or SC upgrades anything that breaks the setup --> it could be months, years or never gets fixed and you're stuck from upgrading. Actually this already happened, twice, with Apple and Wine... Apple first removing 32bit support, requiring workarounds to make Wine work and then later on Wine having that nasty bug that effects SC startup on MacOS and recent versions of SC. For the Wine bug it took almost a year to be fixed by codeweavers... Also last time I checked, manually compiling and using the latest development wine version does not solve the problem... So your concerns are valid for sure and need to be taken under consideration by anyone willing to use SC on MacOS.
