How can I add a watermark to my charts and keep it from moving? I tried using Text Display, but I still get a number with 'open', 'close', etc.

Have you used the "Symbol Display" study and specified "Alternate Symbol Text"?

There is the "Stationary Text" tool. Refer to the following:
