Reading this confirms that market depth data for the last 180 days should be available.
Market Depth Historical Graph: Downloading Of Historical Market Depth Data

I currently have both "Days to Load" for intraday chart data and "Maximum Market Depth Data Days to Load" set to 180.

However, on the chart, data is only available for the last 5 or so days (starting from the beginning of the current week).

I’ve tried scrolling back and using "Download Depth Data From Date-Time", but it seems that no older market depth data is actually being downloaded.

Could you please advise how I can resolve this?

You need to adjust the following setting in order to get more historical market depth data downloaded:
Sierra Chart Server Settings: Maximum Historical Market Depth Days to Download (Global Settings >> Sierra Chart Server Settings >> General >> General)

Keep in mind that if you are using a Continuous Futures Contract, then the system will not download Market Depth data for previous contracts. You would need to open the specific contract and then download the market depth data from that chart, then it will be available in the Continuous Futures chart.
For the most reliable, advanced, and zero cost futures order routing, use the Teton service:
