is it possible to create a keyboard shortcut to cancel all orders on several different products at once from the keyboard? Alternately on the orders and positions window is it possible that all orders would be cancelled from clicking cancel all without the need for the confirmation box?

You can disable the confirmation for that particular command: Global Trade Settings Windows: Display Confirmation for Order Cancellations from the 'Orders' Tab (Global Settings >> General Trade Settings >> Notifications) And we will support a keyboard shortcut for it in the next release.
