As a newbie I wanted to know myself. The answer : Yes.

Assuming that you'd indeed have two instances of Sierra Chart open, each "window" container can be maximized on its own monitor (so to speak). In attached Sierra12 you see that happening (don't use the "V" link for this).
It is just as well possible to detach the charts from the Sierra instance and put (or maximize) them where you want, like normal Windows behavior. See Sierra12a. Window >> Detach/Attach Window.

If you take the latter route, then with one instance of Sierra you can put the detached Chart windows anywhere you want just the same.

How to set up all in a convenient fashion is something else, but I guess all can be done. But for example, maximizing a detached window and remove the menu bar after that may not be a good idea because you can't (I couldn't) get the window back to a manipulative state and the menu can't be put back either. With attached windows, the main Sierra window keeps that control.
