Patrick from Infinity claimed in a YouTube video that opening a second instance of Sierra was a more efficient way to access the computer's CPU than having the same number of charts in 1 chartbook. Is this true? Is there a recommended limit to the number of intances?

Yes this is true.

There is no recommended limit, but really two or three instances should be enough.
