In the documentation it says to copy Sierra3.cfg, Accounts.config, etc. My question is there are those I just mentioned plus Sierra3.cfg.Friday, Sierra3.cfg.Monday and so on. Do I need to copy all those as well?

No you do not need to copy those other ones with the day of week names at the end. They can be deleted.
