Can anyone tell me what the symbol or maybe which data feed I would need to activate to get charts up for the %age of stocks trading above vwap or moving averages?

This can be done through a scan of all of the symbols on the particular exchanges that you want. It is time-consuming. And you need to have a list of all of those symbols. Sierra Chart does not have any way currently to automatically generate a list of all the symbols on the NYSE and NASDAQ.
