I would like to have a separate tool values window open for each product that I'm trading (ie. 2 or more tool values windows open at the same time on different monitors). Is this possible?

No. This is not supported.

Are you looking to display values for studies or the main price graph for the last bar in the chart or a specific bar in the chart in these windows?

Have a look at using the Text Display for Study study:

You can set it to display these values as text on the chart. You will need to add two instances of the study. One for High and one for Low.
