1/ why after changing service from SC Data to Rithmic, historical data is being downloaded? If Denali is used, what is being downloaded actually?

Every service has a different symbology and they have different methods of specifying prices. The data is stored on your system by symbol. So when you change services, you are also changing symbols, and therefore any data that was not already present for that symbol, must be downloaded. And, as noted, due to how different services handle price information, the stored data on disk may be different from one service to another - even though it all comes from the same source.

2/ why after changing service from SC Data to Rithmic, I need to change symbols settings (Global Settings >> Symbol Settings) for example session times, use of evening session etc. ? I was expecting that symbols from SC Data will be mapped to those from Rhythmic and I won’t have to do this.

Whenever you change the symbol for a chart, the settings for that chart are going to update for how that symbol is set in the Symbol Settings. If you need something to have the same settings when you change symbols, then you would need to adjust the Symbol Settings for each symbol/service. Refer to the following:
