Your initial thoughts were correct. The "Days to Load for Intraday Chart Type" is the amount of data initially downloaded for a symbol that has not already had data downloaded. After the initial download, you would need to change the "Date Range in File From" to the date at which you want the data downloaded. Note that this is not true for Continuous Futures contracts, as the "Date Range in File From" only applies to the current contract.
