I have tried using Global Settings > Symbol Settings where I have the option to use custom settings, but that system does not seem to allow me to set custom settings for just EURUSD and leave the other symbols as non-custom.
Am I right that if I take control of one symbol with custom settings that I am also responsible for taking control of all of the others as well?

We are not understanding this statement. You can modify just the symbol settings for the EURUSD symbol.

1. Chart properties should respect the No option. I would like to be able to tell the chart - do not use the data feed and when I duplicate it, it keeps the settings exactly as I had them instead of resetting them to the Global settings defaults (or custom if I check the box - which I don't really want to do because it will mess up other symbols that were fine with their defaults)

The "Auto-Set from Data Feed" option sets the symbol information from the data feed when set to "Yes". But, even when set to "No", a symbol change will update the settings based on the Global Symbol Settings.

There is an option - "Chart >> Chart Settings >> Symbol >> Do Not Change Symbol Settings for Chart on Symbol Change" that does some of what you are wanting, but it will not update all of the symbol settings, so we do not recommend this. You are best served by changing the Global Symbol Settings for the symbols you want a certain way. Refer to the following:

2. Global Settings should offer a custom option for each symbol in addition to a custom settings for all symbols. I would like to be able to just customize symbols and if I tell my chart to use the data feed, that it will then use those settings.

The Global Symbol Settings allow you to change the settings for a specific symbol. The only time it applies to multiple symbols is if there is a wildcard character that is used, such as for U.S. Equities where it uses the ?, ??, ???, etc. symbol settings.

3. Also, it seems the FXCM defaults should be set to the following (by changing the 5 to 1 and adding an additional decimal), otherwise all the snap to high/low fail to work.
