The only way to do that would be to keep your system running at all times and then to manually reset the columns at the start of a session. What you are wanting can be gotten by using the "Volume by Price" study. Keep in mind, the "Current Bid/Ask" columns in the DOM show the actual traded quantities at each price level. You can view that in a Volume by Price study that is setup to show the most recent session and display the "Bid x Ask" volumes for each price level.
