Make sure you are changing the Chart Update Interval in the correct location. For a Trading DOM, you need to select "Chart >> Chart Settings" from the Trading DOM itself (not from the main Sierra Chart window). Then modify the Chart Update Interval on that window to change it for the Trading DOM only.
