There is not a way to get the Value Label for previous periods to show up. It is always going to be just for the most recent item. But, in order to display that information, you could use the Color Bar Based On Alert Condition and have it set to Value of Subgraph for the output. You would just have to work on your Alert condition to get it to only be true at the end of the week.
