There is not an option for what you are looking for. We will add this to our list of work items and tag this as a Feature Request. There is nothing different available in the Volume by Price for replays. The option you tried (From Start Date-Time to End) would be the best option, as it will update during the replay, but it works exactly the same as real-time, in that there is no way to have it adjust based on the viewing area end-time.
