You are making things much harder than they need to be. Just select the option Edit >> Translate Symbols to Current Service. That will take care of updating all the symbols in the open chartbooks. You will want to work with the "new" symbols which are the ones that include the -[exchange name] (like ESH21-CME). Be sure you continue to use those new symbols.
