Is there a way to change the draw style for valleys? Instead of it just being a line, could it draw a zone?

You can change the "Line Style" and the "Width" through the subgraphs for the Peaks and Valleys. But the "Line Style" is limited to items like "Solid", "Dash", "Dot", etc. There is no option for creating a draw zone.
