Is it possible to have depth levels of my choosing to be put on a chart through the spreadsheet study?

You can limit the number of levels that are displayed through the following setting: Chart Settings: Maximum Market Depth Levels (Chart >> Chart Settings >> Market Depth menu) But there is not a way to only display certain levels.
