is it possible to enable trade simulation mode for specific chart ONLY for specific chart in a chart book - at the moment it seems that once you enable that for a single chart, ALL charts in the same chartbook switch to simulation as well

Trade Simulation is a global setting. There is not an option for having this on/off for only a single chart.
