I’m having a problem with replay mode: I have 90 days of historical data, but when I start the replay, it skips forward in 10-to-30-second intervals. I specifically bought a new M.2 SSD so the program would run on its own fast drive without issues. I also have 64GB of RAM and a 6-core i7 processor on an ASRock Z370 Pro4 motherboard. Can anyone help me figure out what settings or changes I need to make so that replay mode runs smoothly and I don't encounter these problems?

If you are actually selecting the button to jump forward or backward, then this will cause a pause of the replay as the system moves to the position you are specifying. And if you jump backwards, then this will cause the entire chart to reload. Given the above, it sounds like what you are seeing is normal.
